Meats Evaluation and Technology

Content

Purpose

The Meats Evaluation & Technology CDE builds interest in and understanding of the meat industry by providing opportunities for recognition through demonstrations of skills and proficiencies. It also gives students a chance to explore career opportunities in the meat industry and encourages them to pursue careers in the field.

What students do: Each student places classes of carcasses and of wholesale and retail cuts, answers questions about two of those classes, quality- and yield-grades beef carcasses, identifies retail cuts, takes a written test, and completes a lab practicum. Teams have four members, and all parts are done individually.
